What the Course Entails and Exam Details

This examination does not have a single required course, but rather assesses a candidate’s accumulated knowledge from education, experience, and targeted self-study. Preparing for the CP-FS exam entails mastering a detailed body of knowledge that covers seven core content areas, structured to evaluate both theoretical understanding and practical application. Candidates must demonstrate proficiency in food science principles and their direct applications.

The core domains you must master include:

  • Assessing food safety (33%): This is the largest section, covering inspection preparation, evaluating Good Retail Practices (GRPs), verifying approved sources, assessing time/temperature controls, and evaluating HACCP plans.
  • Developing food safety policies, procedures, and training (20%): Focuses on risk factor identification, contamination control, developing Good Manufacturing Practices (GMPs), and staff education.
  • Investigating foodborne illness (15%): Covers complaint collection, communication with agencies, interviewing cases, and establishing food histories.
  • Managing food defense practices (7%): Involves vulnerability assessments, hazard identification, and developing defense plans.
  • Performing recall activities (7%): Focuses on staff training for recalls, mock recalls, and managing implicated products.
  • Responding to emergencies (7%): Covers determining parameters for ceasing operations, coordinating response teams, and identifying associated risks.
  • Legal aspects of food safety (11%): Includes research of local laws, obtaining licenses, and ensuring compliance.

What to Expect in the Final Exam

The CP-FS final exam is a rigorous assessment administered via a computer-based testing system. Knowing the exact format will help you prepare your timing strategy.

  • Exam Format: The test consists of 140 multiple-choice questions. Of these, 120 are scored questions, and 20 are unscored pilot questions used for future test development.
  • Time Limit: Candidates are given a total of 2 hours and 30 minutes (2.5 hours) to complete the entire exam.
  • Passing Score: The exam is scored on a scaled system. To pass, a candidate must achieve a scaled score of 650. A raw passing score is mathematically transformed to this standardized number.
  • Specific Rules: Candidates will receive their unofficial scores immediately upon completion at Pearson VUE centers. If a candidate does not pass, they must wait at least 90 days before they are eligible to retake the exam.

How to Study and Exam Centers

Preparation for the CP-FS requires a dedicated and multifaceted approach. Actionable study strategies include:

  • NEHA Study Materials: Utilize the official NEHA CP-FS Manual, which is the primary reference. Consider their virtual instructor-led training courses or online self-paced modules.
  • Reference Books: Study key textbooks, such as "Modern Food Microbiology" and "Essentials of Food Safety and Sanitation."
  • Practice Exams: Take multiple timed practice exams to simulate the actual environment, improve speed, and identify your weak areas in the seven core domains.
  • Flash Cards: Create or use web-based flashcards to master terminology, critical control points, and foodborne pathogens.
  • Focus on Percentage Weights: Allocate your study time proportionally to the exam weights, dedicating the most effort to "Assessing Food Safety" and "Developing Policies."

How and Where to Take the Exam: The CP-FS exam is administered primarily on computers through the Pearson VUE testing network. Candidates can schedule their examination at their convenience at any Pearson VUE location worldwide. You must first apply and be found eligible by NEHA, after which you will receive an Authorization to Test email with instructions on scheduling at a Pearson VUE center. NEHA also offers the exam annually at their Annual Educational Conference (AEC) and potentially at state or regional affiliate meetings. Special group testing sites can sometimes be arranged for ten or more candidates.
