  • Dietary and Allergen Protocol: Understanding which items are, or can be modified to be, Vegetarian (V), Gluten-Friendly (GF), or Vegan (VG), and recognizing common allergens.
  • Beverage and Spirit Knowledge: Fluency in the bar menu, including specialty cocktails, wine, draft and bottled beer, and non-alcoholic options.
  • Up-selling and Description: Developing the ability to describe dishes with engaging, appetizing language and confidently making premium upgrades.
